A sheet of cashew barfi, rolled rather than cut, around a centre of gulkand — rose petals set slowly in sugar until they turn dark and jammy. The cashew is plain on purpose: it is there to carry the rose, not to compete with it.

Cool on the finish, the way gulkand always is. A traditional sweet made properly, with no silver leaf and nothing added for colour.
